Warm Roasted Garlic and Sweet Potato Salad
A salad for the day when you want something warm, but also, it’s delicious cold as well. ;)

Preheat oven to 375
Ingredients
2 Medium - Large Sweet Potatoes, cubed. About 5 or so cups.
4-5 Cloved garlic, sliced. More if you LOVE garlic
2 TBSP Olive Oil
Sea salt and Fresh Pepper
Roast on a baking sheet for around 30 minutes, stirring a few times. Meanwhile, in your serving bowl whisk together:
3 TBSP olive oil
2 TBSP apple cider vinegar
1 TBSP dijon mustard, or whatever you have at home.
1 TBSP honey
When sweet potatoes are crisping on the outside and tender on the inside remove them from the oven and carefully add them to the dressing. Stir to combine, then add:
1 small container of spinach, arugula, or other mixed greens. I like a blend of baby kale, spinach, arugula, and beet tops.
Stir it all up and eat it warm! But also, if you want to make it more of a meal try adding:
Chickpeas
Lentils
Seeds like hemp, sunflower, and pumpkin
Shredded chicken
Black beans
Sliced boiled eggs
And MANY more things I am sure.

Final Thoughts
This salad is also delicious served cold and it stands up to lunch travel, making it a great weekday option if you’re on the go. Be sure to add one of the suggested proteins to make it a complete meal.
