Healthy Chocolate Brownie Bites...

These ARE healthy, unless you eat them all in one go… that would just be TOO many brownies, ok?

This recipe is adapted from Danielle Walker’s recipe for Chocolate Cream Pie with Chocolate Cookie Crust from her lovely cookbook Against All Grain. It’s a great cookbook and that cream pie is a good time!

So are these little bites of chewy chocolatey goodness.

Ingredients

  • 1.5 cups almond flour or meal

  • 1/4 cup shredded coconut, unsweetened. Optional

  • 3 TBSP coconut flour

  • 1/2 cup cocoa powder, unsweetened

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp pure vanilla extract

  • 1/3 - 1/2 a cup raw honey — this depends on your desired sweetness.

  • 1/3 cup coconut oil

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

Makes about 18 two bite brownies.

Instructions

  1. Put all ingredients in your food processor and blast until everything comes together in a sticky sort of ball situation that rolls around the processor like a squishy mess.

    *If your dough seems a bit dry feel free to add in 1/2 - 1 tsp of water until sticky mess is formed. DON’T overdo it.

  2. Scoop dough out with an actual TBSP measuring spoon, pushing dough into the spoon to make a nice firm pack, then popping them onto a parchment lined baking sheet. Allow for a bit of space between each brownie.

  3. Bake for 8 minutes.

  4. Allow to cook before handling.

Store in an airtight container for up to a week in the fridge. I am sure they would freeze very well.

These brownie bites are chewy, chocolaty, and just the right amount of sweetness for my family. Over the years our tastes have changed and we are now those weird people who can’t handle overly sweet things, so these are perfection for us… and I hope now you as well!

Serve these with a scoop of vanilla yoggu https://www.yoggu.ca/ or your favorite yogurt or ice cream for a truly spectacular treat. Or enjoy them on their own!

I like them at around 3pm with a cup of tea and some silence.

They are seriously DELICIOUS and pretty dang healthy if you ask me.

I feel good serving these to my kids with a glass of homemade almond milk and a high five.

Protein, healthy fat, and CHOCOLATE = WINNING!
