Healthy Chocolate Brownie Bites...
These ARE healthy, unless you eat them all in one go… That would just be TOO many brownies, ok?
———————————————————————————
Ingredients
2 cups almond flour or meal
2 TBSP arrowroot, tapioca, or coconut flour
1/2 cup cocoa powder, unsweetened
1/2 tsp baking soda
1/4 tsp salt
1 tsp pure vanilla extract
1/3 - 1/2 a cup raw honey — this depends on your desired sweetness.
1/3 cup coconut oil
OPTIONAL: 1/4 cup shredded coconut, unsweetened
———————————————————————————
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Makes about 18 two bite brownies.
Instructions
Put all ingredients in your food processor and blast until everything comes together in a sticky sort of ball situation that rolls around the processor like a squishy mess.
*If your dough seems a bit dry feel free to add in 1/2 - 1 tsp of water until sticky mess is formed. DON’T overdo it.
Scoop dough out with an actual TBSP measuring spoon, pushing dough into the spoon to make a nice firm pack, then popping them onto a parchment lined baking sheet. Allow for a bit of space between each brownie.
Bake for 8 minutes.
Allow to cool COMPLETELY before handling.
Store in an airtight container for up to a week in the fridge. I am sure they would freeze very well.
