Simple Breakfast (or whenever) Cookies For EVERYONE
I’m always working on healthy grab and go snacks that are fuel for our body, easy to make, and yummy! These ones worked out great, and they work with ALL the dietary requirements! So that’s a bonus.

Preheat oven to 350 Degrees and prepare a cookie sheet with parchment paper.
Makes about 12 cookies per batch. Cook time is 15-20 minutes.
Ingredients
1 Cup Mashed RIpe Bananas
2 Cups Shredded Coconut, Unsweetened. I actually like to use 1 cup shredded and 1 cup flaked, just for a texture variation.
1 tsp Cinnamon
4 TBSP Ground Flax (If you’re strict AIP skip this and add 2 tsp Coconut flour and know that your cookies might take a few extra minutes).
1/4 Cup Almond or Seed Butter (Optional. If you’re strict AIP skip this)
Pinch of salt
About a 1/4 cup Chia Seed Jam, recipe link below. This jam is so easy to make and only takes about 20 minutes total! So get into it.
AIP team, I will work on a jam recipe for you. You could just skip the chia seeds and let it cook slow and low for an hour until it naturally thickens! OR, this cookie recipe is good without the jam as well.❤️

Instructions
Mix all ingredients together in a bowl. It’s not a hard mix so I don’t use my stand mixer.
Drop by large spoonfuls onto your prepared cookie sheet. I make mine a heaping tablespoon size and this normally makes about 12 cookies.
Then flatten with the back of a fork, or whatever until about a 1/4 inch thick and shape into a nice round cookie. They don’t spread out at all so make them the shape you want.
Create an indent in the middle of the cookie using your finger or a spoon handle or whatever you want.
Fill the indent with about 1 tsp of chia seed jam.
Bake for 15-20 minutes, or until slightly golden and set looking.
Let cook for a few minutes and then transfer to a cooling rack. This is helpful because it allows moisture to escape from the bottom of the cookie as well, making it a nicer texter.
