Delicious Toasted Maple Nuts and Seeds + "Tamari" Nuts

I love this simple snack so much!

My favourite way to enjoy a handful is with a sliced apple and a cup of tea.

It’s a bonus to include the super healthy seeds, and what makes this recipe great is the most of the seeds stick to the nuts so it’s like little clusters of crunchy, sweet, salty goodness.

Preheat oven to 325 degrees and line 2 cookie sheets with parchment paper.

Also, feel free to half this recipe! I make a HUGE batch because we eat it a lot.

Ingredients

  • 3 Cups mixed nuts. I use mainly almonds and cashews because that’s what my family enjoys.

  • 1 Cup pumpkin seeds

  • 1/2 Cup sunflower seeds

  • 1/4 Cup hemp hearts (Optional)

  • 1/4 Cup Sesame Seeds

  • 1/4 Cup coconut ribbons (Optional)

  • Pinch of salt

  • 1/4 Cup maple syrup

Instructions

  1. Distribute the nuts on the cookies sheets and bake for about 20 minutes. Stirring halfway through to get an even toast on.

  2. While nuts are toasting pour 1/4 cup of maple syrup in a large bowl.

  3. When nuts are toasted remove from oven and CAREFULLY dump into the bowl with the maple syrup and stir with a spatula until all nuts are coated. They will be HOT and the syrup will steam a bit and it will all be a bit hectic. Not to worry, it will be worth it.

  4. Add in any seed or coconut you’re using and stir gently to coat with the syrup.

  5. Dump nuts and seeds back onto the parchment covered cookie sheets and smooth it all out into even layers.

  6. Put back in oven and toast for another 5 minutes.

  7. Remove and sprinkle with salt.

  8. Let cool for about 5 minutes, then using your spatula or just shifting the parchment paper around, loosen the nuts and seeds off the paper so that the syrup sticks to the NUTS not the paper.

  9. Let cool completely (you don’t want to skip that step, otherwise they might be a bit soft… still delicious, but not as crispy) and store in an airtight jar for as long as it takes for you to eat them.

Tips

This is a big batch because we eat them a lot, but please half the recipe.

I often make these when I’m prepping something else because although it seems that there’s a lot of steps, they are actually VERY easy to make! I promise. You do need to be in the kitchen though because you do not want to burn 3 cups of nuts.

BONUS RECIPE!

TAMARI TOASTED NUTS.

It’s all the same really, but instead of doing maple syrup in the bowl you do 1/4 cup of Coconut Aminos, or Tamari.

When I make Tamari nuts I don’t do ALL the seeds, but you do you! Test it out and let me know what you love!

If you’re using coconut aminos I sometimes add a pinch of salt at the end, depending on the brand. Some of them are more sweet than salty.
