Healthy And Delicious Apple Cake.
This cake is so healthy you could have it for breakfast (like us) — but so delicious and special you could serve it for desert.
POWERHOUSE APPLE CAKE
Preheat oven to 350 and prepare an 8x8 pan with coconut oil and a square of parchment on the bottom.
Time: 10 minutes to prepare and 50 - 60 minutes to bake
INGREDIENTS:
3 Large Apples peeled and roughly chopped (or a very full cup of applesauce + one whole large apple).
1/3 Cup Coconut Oil
6 Eggs (Yes, 6. Don’t mess with this part)
1 tsp Cinnamon
1/4 tsp Ginger
1/4 tsp Fresh Nutmeg
1/2 Cup Coconut Flour
3/4 tsp Baking Soda
3 TBSP Coconut Sugar (Optional) *
4 Roughly Chopped Dates (Optional)
1/4 Roughly Chopped Walnuts, Hazelnuts, Pecans, Almonds… any nuts will do. This is also optional if you plan to send it in school lunches just skip the nuts for school safe powerhouse snack!
1 Large Peeled and Chopped Apple
INSTRUCTIONS:
Add 2 of the chopped apples (or the heaping cup of applesauce), coconut oil, and eggs to a high powered blender and blend on high until light and fluffy. Make sure to do this part as this will add a lightness to your cake.
Add in the coconut flour, spices, baking soda, and the coconut sugar if using and blend on low until all mixed together. You might need to use a spatula to push things down here a bit.
Add the roughly chopped apple, and any other add ins you want and PULSE on low JUST UNTIL MIXED IN. Alternaty you can stir your add ins in with a spatula.
Pour into prepared baking dish, the batter will be a bit like pancake batter.
Bake for 45-60 minutes. Testing after 45 minutes. Tester should come out clean.
Serve warm, or let cool completely, cover, and store in the fridge for up to 5 days.
*Feel free to adjust the level of sweetness! My husband prefers it with no coconut sugar and just a few dates; my kids like it with both.
OPTIONS and INFORMATION:
BREAKFAST CAKE OPTION: This is an INCREDIBLY healthy cake that is filled with FIBER, PROTEIN, and HEALTHY FATS so it makes a great breakfast. We like it with almond butter and a few slices of sugar/nitrate free bacon on the side. It keeps us full all morning.
SNACK CAKE OPTION: Well, just eat is as is! It’s great as a snack with a cup of tea, or leave the nuts out and pack it for school lunches.
DESSERT CAKE OPTION: It will also make a beautiful dessert cake! You can jazz it up with a drizzle of maple syrup and some coconut whipping cream; or make caramel sauce using dates and drizzle that over! Yummmm.

This cake really is a powerhouse. It’s full of healthy fat which is good for your brain, your body, and actually helps keep you feeling full longer.
It’s also packed with fiber, which ALSO keeps you feeling full, and is just the best for many reasons involving your guts… and pooping. Yup! I’m talking about pooping!
It is advised to drink EXTRA WATER when first getting used to coconut flour. FIBER IS AMAZING at clearing out your body, but needs water to help it along. :D
Add in all the protein power from the eggs (and coconut flour) and you are ready to crush the day my friend. Seriously.

Also it is good to remember that this isn’t made with your traditional ingredients, so it won’t be exactly like regular cake! My family has grown to love it and we have some version of this onhand ALL the time for breakfast, snacking, and after dinner treats.
