Healthy Chocolate Truffle-ish Energy Balls

Healthy Chocolate Truffle-ish Energy Balls

So simple, so delicious and also packed with healthy fats and protein!

You cannot go wrong with these chocolaty balls of goodness.

Makes about 25 balls, but feel free to half the recipe.

Ingredients

  • 2 Cups Almond Flour

  • 5 TBSP Almond Butter

  • 4 TBSP Local to you Raw Honey

  • 1 tsp Pure Vanilla Extract

  • 4 TBSP Unsweetened Cocoa Powder. Preferably fair trade and ethically sourced, locally I like the brand Camino. (Extra for dusting if you want to serve these as truffles).

  • 4 TBSP Hemp Seeds

  • 1 TBSP Coconut Oil

  • Pinch of Sea Salt

———————————————————————————

Instructions

  1. Put all the ingredients in you food processor with the S blade and blast it until everything is nicely mixed together. You may need to scrape the honey off the sides a few times.

  2. Using a TBSP I like to scoop the dough out and press it firmly, then carefully scoop them out and press quickly and firmly into balls and place on a lined cookie sheet.

This can be a tiny bit of a challenge; not a big one, but a tiny one.

I have found that if I don’t use the TBSP and really press it in, the dough can want to crumble a bit—rest assured, you don’t need to have won the strong hand contest at the county fair, you just need to press the dough together, and then firmly roll them to make your desired shape.

  3. Freeze for an hour or so to let them set, then transfer them to an air tight container and keep in the fridge.

They will last for a couple weeks I’m sure, but best of luck keeping them around longer than a week.

  4. To serve these as a simple and healthy after dinner treat, simply roll them in some cocoa powder, to make them truffle-ish like! The balls will absorb the cocoa powder over time, so I suggest doing this right before you serve them out.

It’s good with the dusting of extra chocolate, but they’re also good without.

Final Thoughts

These make a great after school power up snack, or a delicious sweet bite with a cup of tea.

These are kept healthy by the low amount of sugar (healthy honey) added, along with the high amount of plant protein and healthy fats.

Hemp seeds are rich in healthy fats and essential fatty acids, omega-6 and omega-3. They are also a great protein source and contain high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. Hemp, it’s a plant that never ends with its goodness!

You can add in other flavours like cinnamon or nutmeg or whatever gets you going here.

I hope you enjoy, and please share with all your food and health loving friends and family!
