Gluten and Sugar Free Banana Oat Muffins - Kid Approved!

This is one of those recipes that I make so often I forget it’s a recipe that I could share.

It’s simple, made with ingredients you probably already have, and they’re a HUGE hit with the children.

It’s also very versatile and you can add in anything to want to jazz it up.

Try adding a bunch of seeds, some shredded carrots and/or apples, maybe some shredded zucchini, chopped nuts, dried fruit, some berries… whatever gets you going!

Ingredients

Preheat oven to 350 degrees and line a muffin tin with parchment or silicone liners.

  • 1.5 cup organic, gluten free oat flour. Make this at home by taking 1.5 cups of old fashioned oats and blending them until it’s flour… so simple it’s outrageous.

  • 1 cup organic, gluten free old fashioned oats

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp of salt

  • 1 tsp cinnamon (Also feel free to add in some ground ginger (1/2 tsp), freshly nutmeg (1/4 tsp), or pure vanilla extract (1 tsp)… whatever gets you going!)

  • 1/4 cup coconut sugar (optional) If the banana is SUPER ripe I will often skip this, especially if I plan to add chocolate chips.

  • 1/2 cup milk

    I use homemade almond or cashew milk, but regular would work too I am sure. *if using coconut milk from a can make sure to dilute it so it’s more milk-like. Otherwise the batter isn’t moist enough. To make coconut milk from a can more milk-like, add 3-4 cups of water and blend until combined and smooth.

    BOOM, you just made your own dairy free milk in under a minute.

  • 2 organic, free range eggs (Find a local farmer! I bet there’s someone with chickens not too far from you!)

  • 1/2 cup unsweetened apple sauce

  • 1 cup mashed banana, usually 1 banana. I mean, who’s going to not just use the entire banana!?

  • 1/4 cup chocolate chips of your choice, or as many as you want!

    Or, feel free to swap things up here, and add bunch of seeds, some shredded carrots and/or apples, chopped nuts, dried fruit, some berries… or whatever gets you going!

Ok, so, I sometimes don’t have apple sauce and I don’t feel like making it, so I will just double the amount of banana I use and add a splash more milk.

Or, I sometimes don’t have a ripe banana around so I will use a shredded apple in place of the banana.

That’s what cooking at my house is like, so it’s funny that I publish recipes for people to follow! Gulp.

Think of them as a guide for your kitchen explorations, not an exact recipe.

Instructions

  1. Add dry ingredients together in a medium bowl and mix until combined.

  2. Add wet ingredients to the dry ingredients and mix it all together. I don’t bother with a second bowl, I just add the wet on top of the dry and mix it together. They might be more elevated in texture and crumb if you spent the extra time, I just don’t like doing dishes. You do you sweet sunshine and let me know how it goes!

  3. Add in whatever extras you’re using and gently stir in, just until combined.

  4. Scoop out into parchment or silicone lined muffin tin so the mixture is to the top of the muffin cup.

  5. Bake for 20-25 minutes

  6. Let them cool.

  7. Eat them.

Nutrition And Tips

These refined sugar free and gluten free muffins have the potential to be pretty dang healthy, and really, they can be an awesome grab and go breakfast or school lunch snack.

They come together in a flash and are always a hit with my kids and their friends. WIN!

Oats are a well-balanced source of carbs, fiber, and contain more protein and fat than most grains. They are also loaded with important vitamins and minerals and antioxidant plant compounds!

Using bananas to sweeten baked good is my favourite thing because it offered a gentle sweetness along with added nutrient and flavour!

Add in any extra nuts, seeds, shredded things and these muffins just keep getting more and more healthy.
