Delicious Dairy Free Zucchini Tzatziki (or cucumber).

Creamy and delicious dairy free tzatziki made with zucchini Or cucumber!

Either way is delicious, dairy free, plant based, and filled with phyto goodness.

Ingredients

  • 1 Cup cashews, soaked 4 - 12 or so hours.

    (AIP version is to use 1 cup plain coconut yogurt and skip the water below)

  • 3/4 Water

  • 4 TBSP fresh lemon juice

  • 1 TBSP olive oil

  • 1/2 tsp salt

  • 1 clove garlic (optional)

  • 1 packed cup of shredded zucchini (or organic cucumber)

  • 4 TBSP fresh dill, roughly chopped.

Instructions

  1. Put the cashews, water, lemon juice, salt, garlic clove, and olive oil in a solid blender and blend on high until smooth and creamy. If you don’t have something like a Vitamix you will want to make sure you soak your cashews for the full 12 hours or so.

  2. Add the shredded zucchini (or cucumber) and dill and blend on medium just until combined.

  3. If you have time let this sit for a few hours or overnight for the flavours to meld together.

*If you’re making this AIP swap out the cashews and water and use plain unsweetened coconut yogurt*

Final Thoughts

I LOVE this recipe!

It goes with everything from fish to veggies and dip to flatbread or crackers.

Feel free to swap out the herbs and make new flavors. If you don’t have fresh dill use dried (start with about 2 TBSP) or use basil and a bit of mint or chives, or try it with a whole mixup of herbs if you want.

Also, this is wonderful with cucumbers! I just like to use the zucchini when I can’t find organic cucumbers, or when the zucchinis look fresh and delicious and the cucumbers look grim.

Cucumbers are also higher on the dirty dozen list than zucchinis, and organic can be hard to find/afford sometimes!

For a long time I didn’t really think about organic, it was just a more expensive version of food; but now I try.

For a lot of reasons, but basically it comes down to the fact that when we buy organic we’re supporting our global environment, the health of farmers and people who work on the farms, and our own health.

It’s just not normal to spray a bunch of toxins all over the place and hope that it’s not going to hurt anything.

So, if you can afford organic, buy organic.
