Strawberry Basil Balsamic Dressing
If you want to eat more salad — or get your family to eat more salad, you need to have a few good dressings on rotation… this is one of them!
Simple, straightforward, and so good for you.
All you need to do is put the things in the blender!

Ingredients
1 Cup ORGANIC* strawberries, frozen or fresh
1/2 Cup balsamic vinegar
1/2 Cup olive oil
2 TBSP pure maple syrup
1 TBSP Dijon mustard
Pinch of sea salt and a few solid cranks of fresh pepper
1 TBSP fresh basil

Instructions
Put all the things in a blender and blend until smooth… Ummmm that’s it.
Store in a jar in the fridge for a week.

*Strawberries are PACKED with vitamins (they’re an excellent source of vitamin C and manganese and also contain decent amounts of folate (vitamin B9) and potassium), fiber, and are particularly high in antioxidants known as polyphenols that fight things like bad bacteria and cancer cells.

They’re also NUMBER ONE on the dirty dozen list.
This means that how they are grown exposes them to a high amount of pesticides and due to their very thin skin they just soak that poison right up. Not cool. Because no matter how you feel about organic or non-organic, NOBODY likes to eat a bunch of poison. NOBODY.

That’s real talk my friend. I know shopping organic is expensive, I feel that big time. So just do your best my lovely. Just do your best.

I like it on a basic salad made up of any mixed greens, shredded veggies, and some maple nuts and seeds. (link below).
It’s also delicious with some shredded chicken or chickpeas rinsed and drained. Honestly, I think you could splash this on anything and it would be a hit!
