DELICIOUS Dairy Free Mango "Ice Cream" (no ice cream maker required)

So simple, SO delicious, and so satisfying.

My kids LOVE it and I feel really great making it for them because it’s made with such clean and healthy ingredients.

Yay!

Ingredients

  • 1 Bag FROZEN Mango (600g)

  • 1 Cup FROZEN Pineapple

  • 1 Cup plain dairy free yogurt or your choice. (if you live in BC you have got to find some Yoggu — it will change your life) OR 1 cup of the solid part of a can of coconut milk.

    And yes, you can use dairy yogurt if that’s your jam!

  • 1/2 Cup Raw Honey

  • Zest and Juice From One LIme (plus extra for a bit of a dusting on top of each serving if you like… I like it).

Instructions

  1. Put ALL the things in a food processor and BLEND until SMOOTH. Scrape down the sides if you need.

  2. Serve right away with a fresh zest of lime.

  3. Alternatively you can put it in a container and keep in the freezer. This is best eaten within a few hours in my opinion, but if you want to make it earlier just be sure to remove the container about 15 minutes before you plan to serve it.

    The honey keeps it from becoming COMPLETELY solid, but it’s not a total miracle worker so just know, this is best eaten right away. ;)

Final Thoughts

I haven’t met a person who doesn’t love this. It’s like eating sunshine in a bowl, and it’s made with such clean ingredients you really don’t need to feel bad about digging in every now and then.
