Nut Free Chocolate Energy Balls

Most of the time I need to make a snack for the kids lunches, and a snack that Scotty can enjoy.

These little balls break the rules!

ENERGY BALLS FOR THE FAMILY

INGREDIENTS:

  • 1/2 Cup Sunflower Seeds - Toasted

  • 1/2 Cup Sesame Seeds - Toasted

  • 1/2 Cup Unsweetened shredded Coconut - Toasted (Plus more for rolling the balls in)

  • 1/4 ish Cup Chopped Unsweetened Chocolate (or paleo approved chocolate chips - leave these out if you’re doing the IFM elimination diet.)

  • 1/4 Cup Cocoa Powder - unsweetened (If you’re doing the IFM elimination diet leave the cocoa out. I added in a tsp of cinnamon and 1/2 tsp of ginger to just switch the flavours up.)

  • 1 Cup mixed dried fruit, all the same ish size. Some options are: Raisins, cranberries, currents, dried cherries, etc. (Make sure to use unsweetened and sulfate free dried fruit).

  • 1 Cup Sunflower Seed Butter (If you don’t need to worry about nuts, these are extra delicious with almond butter — any nut butter really!)

  • 1/4 Cup Honey

  • 2 Scoops of Collagen Powder, or your favourite protein powder - OPTIONAL

INSTRUCTIONS:

  1. As you carefully toast the Sunflower Seeds, Sesame Seeds, and Coconut in a dry pan on low heat, gather up the rest of your ingredients and have them ready. Make sure to be stirring the seeds often, they can burn quickly!

  2. Once your seeds and coconut are nicely toasted dump them in a large bowl, or your stand mixer.

  3. Add the rest of the ingredients and mix with a spoon or on low speed in your mixer. The heat from the toasted goods will melt everything together into a bit of a sticky mess.

  4. Let it rest for a few minutes, then roll the balls out between your hands and finish them off by rolling them on a plate of shredded coconut

  5. Refrigerate until firm and store in a refrigerated container for up to a week. Freeze for grab and go snack option!
