Raspberry Balsamic Dressing
Sometimes I make something and the kids say “yummmm…” and I feel like a total rockstar for a minute. This is one of those things.
It’s very simple to make but feels like something special, and if the carrot ginger dressing is like sunshine in a bowl, this is like a warm summer day in a bowl.

Ingredients
1 Cup raspberries, frozen or fresh
1/2 Cup balsamic vinegar
1/2 Cup olive oil
2 TBSP pure maple syrup
1 TBSP Dijon mustard
Pinch of sea salt and a few solid cranks of fresh pepper
About a 1/2 tsp of fresh thyme or basil if you would like. It’s great either way, I often have run out of fresh herbs is all.

Instructions
Put all the things in a blender and blend until smooth… Ummmm that’s it.
Store in a jar in the fridge for a week.

Nutrition And Tips
Raspberries are a good source of fiber and vitamin C, as well as many other important vitamins and minerals. They also taste like a hot summer day and make me smile like a small child who has just discovered she’s alone in a berry shop.

I have spent so much time in a raspberry patch, I can’t even tell you — and I love it still.
Crouched down low, branches heavy with juicy ripe berries above your head, knees stained red, seeds stuck in your teeth, filtered sunlight rippling across your face, daddy long leg spiders dancing along bright green leaves, and a smile on your face as you listen to the birds talking about how good the berries are this year.
A good raspberry patch is also the best kids “chore” I have ever come across; even if that days harvest ends up in their bellies. The sound of siblings chattering to each other as they chow down warms my heart, and the smiles on those faces as they bring you a nearly empty bowl makes the world a better place.
Simple things.
As for this dressing! I suggest serving it on salad. ;D
For real though, I like it on a basic salad made up of any mixed greens, shredded veggies, and some maple nuts and seeds. (link below). It’s also delicious with some shredded chicken and avocado, or chickpeas rinsed and drained.
