Creamy Walnut and Fresh Herb Dressing
This dairy free creamy walnut dressing is smooth, savory, and satisfying. You will never miss dairy based dressings again!
I served this dressing over a bed of salad greens that I topped with olives, roasted sweet potatoes, grilled asparagus, and sliced up veggies of all kinds; along with a glass of New Zealand white.
It was delicious!

Ingredients
3/4 Cup soaked raw walnuts (soaking for 8 hours of overnight allows access to more of the nutrients that nuts and seeds contain, it also blends up smoother and easier).
1/3 Cup olive oil
1/3 Cup water (feel free to add more if you want your dressing to be more liquidy)
1/4 Cup fresh lemon juice
1 tsp nutritional yeast (optional but delicious)
1 clove or 1/2 tsp garlic (optional)
1/4 tsp salt
Place all these ingredients in a high power blender and blend until smooth and delicious. You may need to scrape the sides down if you have a large Vitamix like I do, but be patient, it’s worth it. Once it’s nice and smooth continue to the next step.
4 - 5 TBSP fresh herbs. You can use ANYTHING you like here, but I used 3 TBSP parsley, 2 TBSP basil and 1 TBSP chives.
Finely chop the herbs and stir into the dressing. Feel free to blend them in if you would like but be ready that your dressing will turn green… which is totally cool.
If you have time allow this dressing to rest in the fridge for a few hours before consuming to let the flavours dance together.
